Thea Gregory loves zombies. Who doesn't, right? But Thea's zombies are not like other zombies you know. She manages to craft zombie characters who are equally horrifying and sympathetic.
Locked In (installment #1 of The Zombie Bedtime Stories), is acutely aware of the changes she is going through and finds herself trapped in her own body. As I read this tale, I simultaneously wanted to hug Haley and run screaming from her. It's a fresh new perspective in the zombie genre.
My personal favorite is the tale Zombie Pride in which a pastor bent on "curing" homosexuality finds himself trapped at a pride parade full of infected celebrants. Oh, the irony.
When not filling her time crafting stories of zombie mayhem, Thea loves to cook and she has been kind enough to share with us the recipe for what she describes as the best apple crisp you'll ever eat. This is the kind of dessert that is perfect for a crisp fall evening curled up with a zombie tale to keep you company.
Here's the best apple crisp ever:
8 large apples
1/3 cup brown sugar
1tbsp 4-spice mix (Cinnamon, nutmeg, cloves and allspice)
2/3 cups butter
2/3 cups whole wheat flour
2/3 cups quick cook rolled oats
1 tsp cinnamon or 4-spice mix
Preheat oven to 350F
Peel and core apples, cut into bite-sized pieces and stir in brown sugar and spice mix. Place in a lightly greased 11x7 baking pan or pyrex.
Melt butter, stir in whole wheat flour, oats and spices. The amount of butter can be adjusted to make a lighter, more crumbly crisp or a richer, denser crisp, but the mixture should be moist enough to clump together and be evenly distributed over the apples.
Bake for 40 minutes, and let cool for 5-10 minutes before serving.
